While it would be easy for somebody like me, it's generally not as simple as just creating a new version. Often you design so that a wallpaper can be rendered within a small range of aspect ratios. 4:3 can be converted without much trouble to 16:9. 32:9 is a different story.
According to some trade rag I was reading maybe a year ago, dual monitor users represent less than 2% of all PC users. A dual monitor wallpaper requires more than twice as much work as a single monitor project, because not only do you have twice the space to fill, it adds a number of UI considerations you wouldn't have to mess with otherwise.
Every wallpaper I've produced in the last year has been dual monitor ready (as I'm one of the 2%), but I have a VERY good understanding of why nobody else wants to mess with the format. Please understand that you're asking a lot of extra work of people, and that from the artist's perspective, it's a lot of extra work to please a very small demographic.

I myself have been looking for dual monitor wallpapers to go onto my new setup once it is complete. Indeed, alot of the ones out there suck. :( But yeah, I think only the dual+ monitor users would be creating the wallpapers. I myself would like to see more wallpapers of the dual monitor arrangement but seeing as alot os users still use only one monitor... I think it won't come anytime soon.
At the moment, I think Kol has the best dual monitor setups. But thats just my opinion. If you want really nice walls, and arent afraid to pay, Plasmadesign.co.uk is pretty cool. I havent bought anything from there though.
